Spicy Penne a la Vodka

Ingredients:

  • 4 tbsp unsalted butter

  • ½ sweet onion, diced

  • Salt & pepper to taste

  • 1 tbsp of garlic, minced

  • ½ tbsp calabrian peppers

  • ¼ cup tomato paste

  • ¼ cup vodka

  • 1 cup heavy cream

  • ¼ cup grated parmesan

  • Fresh basil

Steps to follow:

  1. Melt the butter on medium-low heat. Once melted add the onions and sauté for 10 minutes. Then add in 2 tbsp water to deglaze the skillet before letting them sauté for an additional 5-10 minutes, letting them sit until very soft and translucent.

  2. Add in the garlic and calabrian peppers and sauté for about 1 minute before turning the heat up to medium and adding the tomato paste. Cook this stirring constantly for 2-3 minutes.

  3. Then deglaze with vodka and simmer for a minute or two until it has mostly evaporated. Then lower the heat back to medium-low.

  4. Add in the heavy cream and stir it in and let sit for 5-8 minutes until it has thickened. Then to finish the sauce add in some salt, black pepper, and the parmesan cheese. Toss your pasta in and stir for a few minutes. Add in a little pasta water to loosen the sauce a bit.

  5. Serve.
