Ropa Vieja

Ingredients:

  • Flank steak

  • 1 yellow onion, sliced

  • 1 green & red bell pepper sliced

  • 1 tbsp of garlic, minced

  • 2 tsp oregano

  • 2 tsp cumin

  • 2 tsp smoked paprika

  • 2 tsp salt

  • ½ tsp black pepper

  • ½ dry white wine

  • 1 cup beef broth

  • 16 oz tomato sauce

  • 6 oz tomato paste

  • 2 bay leaves

  • 1-2 tbsp avocado oil

  • 1 tsp sugar

  • 1 tbsp worcestershire sauce

  • 1 tsp red wine vinegar

  • 1/3 cup green olives

Steps to follow:

  1. Cut your flank into chunks around 4-5 inches and season with salt and pepper. Pour avocado oil into skillet and sear these on all sides.

  2. Sauté onions and peppers in the pressure cooker for 2-3 minutes.

  3. Add the garlic and once fragrant (1 minute typically) add the tomato paste and oregano, cumin, and smoked paprika. Cook this down for another 2-3 minutes

  4. Deglaze this with the dry white wine and let most of it evaporate. Once it has pour in the tomato sauce, beef broth, sugar, and worcestershire sauce. Also add some salt to your own liking and add in the 2 bay leaves.

  5. Now add the meat into pressure cooker and cook for about 45 minutes or until you are able to shred the beef fairly easily.

  6. After shredding the beef put it back into the pot along with the green olives and let it cook for another 10 minutes. Before serving add the red wine vinegar and stir it into the sauce.

  7. Lastly serve on top of some rice.
