Vaca Frita
Ingredients:
Flank steak
2 bay leaves
2 tsp salt
1 tbsp of garlic, minced
1 tsp oregano
1 tsp cumin
1 tsp salt
½ tsp black pepper
Juice of 2 limes (more if you prefer)
Juice of ½ orange
1 white onion sliced into strips
6 tbsp avocado oil
Salt & pepper to taste
Steps to follow:
Cut your flank steak into chunks around 4-5 inches in size. Then pressure cook it with enough water to cover the steaks and 2 tsp salt and the bay leaves for 40-45 minutes.
Shred your beef with two forks. Then season it with garlic, cumin, oregano, salt (1 tbsp), black pepper, lime, and orange. Marinate this for at least 30 minutes (preferably an hour). Drain slightly once done.
Heat up your pan on medium-high heat and pour the oil into it. Then add the shredded beef. Let this sit untouched for 5 minutes to get the desired crust on the meat. Throw in your onions and cook for about 2 minutes. Now you can continue to mix it around until you have your desired crust on the beef.
Serve along with rice and beans and of course some more lime.
