Chicken Pesto Caprese Sandwich
Ingredients:
Pesto sauce
Focaccia bread
Chicken breast
Olive oil
8-10 grape tomatoes sliced in half
Mozzarella slices
Salt & black pepper to taste
½ tsp italian herb seasoning
½ tsp garlic powder
Steps to follow:
Preheat your oven to 350°. Season the grape tomatoes with a pinch of salt and some italian seasoning. Then pour olive oil on top enough to give them a nice glaze. Now toss these together and lay them on a sheet pan and put them in the oven for 40 minutes.
At around the 20 minute mark turn on the stove and put some oil in a pan. Then prepare your chicken by cutting off the fat and seasoning it with salt, black pepper, italian herb seasoning, and some garlic powder. Once the pan is hot throw on the chicken and cook for about 4-5 minutes per side.
Now you have to prepare the bread. Slice it in half and put it in the oven for 3-5 minutes with a spread of olive oil on each piece.
Once it is done spread the pesto on both pieces. Add your chicken. Roasted grape tomatoes. Lastly add the mozzarella on top.
To melt the cheese place the sandwich open in the oven for about 2-4 minutes.
Lastly take out the oven and assemble the sandwich by drizzling some olive oil as a finishing touch.
